Alice’s Pumpkin Loaf

When we moved to Los Angeles, over 17 years ago, we were immediately embraced by a wonderful community of talented and loving people who also happen to be great cooks! My friend, Alice, is one of those individuals. Her recipe for Pumpkin Loaf is easy, delicious and a true crowd pleaser. I guarantee you will quickly add it to your favorites as well! Alice informs me that she now cuts the sugar in half. As yet, my sweet toothed family has not allowed me to do that, so I use the recipe as is.  However,  I invite you to try it with less sugar and see what you think.

Ingredients
2 Cups Sugar
½ Cup Canola Oil
1 16 oz can of  Pumpkin
2 ½ Cups Flour
1 tsp Baking Soda
½ tsp Cinnamon
½ tsp Cloves
½ tsp Salt
1 Cup Walnut pieces (optional)

Instructions
Preheat oven to 350 degrees
In a mixing bowl cream sugar and oil
Sift together dry ingredients and add to mixture
Add canned Pumpkin
Add optional Walnuts
Pour into greased loaf pan and bake 1 hour or until cake tester comes out clean
