Maple-Glazed Salmon

Whenever I go out to eat, I try to order fish for two reasons. The first is, it is usually the lowest calorie dish on the menu; and second, and most importantly, I do not cook fish well. I can never duplicate what I taste at a restaurant. However, here is one recipe that I found in a William Sonoma catalogue that is fool proof, easy and delicious. Again, never toss those little mailers in the garbage as they often contain wonderful recipes, such as this one. Each time I serve it, people ask me for the recipe, so now I would like to share it with you!

Ingredients

  • 2 teaspoons paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon brown sugar
  • 1 teaspoon sea or kosher salt
  • 4 (6-oz) salmon fillets
  • Cooking Spray
  • 1 teaspoon maple syrup

Preparation

  1. Prepare grill, heating to medium.
  2. Combine first 5 ingredients. Sprinkle fish with salt; rub with paprika mixture.
  3. Place fish on grill rack coated with cooking spray; grill 7 minutes. Drizzle fish with syrup; grill 1 minute or until fish flakes easily when tested with a fork. Yield: 4 servings (serving size: 1 salmon filet).
