This recipe was given to me at my bridal shower and I have been using it for 28 years. There's nothing like a scratch brownie, and this one is dairy free.
Dairy Free Scratch Brownies
8 in square pan
2/3 cup margarine
½ cup cocoa
2 eggs
½ cup flour
1 tsp. vanilla
½ tsp salt
1 cup sugar
Icing:
2 tablespoons margarine
2 tsp cocoa
1 cup icing sugar
Hot coffee to make thinner
Directions
Preheat oven to 350. Grease an 8-in square pan, cream the margarine and sugar until light and fluffy. Add the eggs and mix well. Sift cocoa, flour and salt together and add to mixture. Add vanilla. Stir until well blended and pour into prepared pan. Bake for 25-30 minutes until cake tested comes out clean. While the brownies are baking, prepare the icing. Spread over warm brownies.
