Ingredients:
1 Spaghetti Squash
3 cloves garlic
1 box of cremini mushrooms
1 bunch of asparagus, cut into bite-sized pieces
Olive oil
Directions:
Preheat oven to 400 degrees. Lightly spray a rimmed baking sheet. Half the squash length wise, place halves face side down, and bake for 30 minutes.
Meanwhile, in a large skillet, heat 2 tbsp olive oil over low heat. Add garlic. Cook until fragrant and just starting to color. Add mushrooms, cook till tender. Add asparagus, turning the heat to high for 1 minute. Bring the heat back down to low, sautee stirring constantly for 3-4 minutes. The goal is to maintain the green color of the asparagus .
When squash is soft to touch, remove from oven, using a fork scrape the flesh into strands. Add the stands to the skillet, and toss with the asparagus and mushrooms. Season with salt and pepper to taste, serve immediately.
