Melon "Cake"

Here is a refreshing and colorful dessert that is perfect for the heat wave all parts of the country are experiencing at the moment. Allow yourself this starch free, protein topped dessert!

Instructions:

3 different melons, such as Honeydew, Cantaloupe, Watermelon, or any other summer melons. 

1/2 cup Greek Yogurt

2 tbsp sliced almonds

1 tbsp honey 

Directions:

1. Cut both ends off each melon to make 4-inch center slices

2. Remove  seeds, then stack the 3 centers

3. Use a big knife to shave the rind off the 3 stacked rounds at once, cutting down the sides of the "cake" while turning

4. Fill the center cavity with 3/4 c Greek Yogurt, then top the stack with Greek Yogurt, Sliced almonds, and honey.
